Although described as a 'pudding' this recipe makes a great breakfast. Finding a way to start the day with a vegan dish high in omega-3 fatty acids can be a challenge, but the chia seed contains more of these healthy fats than salmon pound for pound.

They are also a great source of protein and contain beneficial minerals and fibre.

The pudding is served topped with delicious fresh raspberries and blueberries.

Serves 2
Ingredients:
4 tbsp chia seeds
150ml orange juice
200-250ml coconut milk
2 tbsp coconut yoghurt
Fresh raspberries and blueberries to top

Method

1. Soak the chia seeds in the orange juice overnight
2. In the morning add the coconut milk and stir to get the rightconsistency
3. Add the coconut yoghurt, stir, and divide between two bowls or pots
4. Sprinkle on the fresh raspberries and strawberries and serve
